Blueberry Sorbet

Sorbet is a frozen dessert made from sweetened water with flavoring of fruit juice, puree or honey. Ice cream is based on a dairy product where as sorbet is served as a non-fat or low-fat alternative to Ice cream. Today's recipe is about Sorbet with a flavoring of fresh / frozen blueberries mixed with sugar, honey, buttermilk and lime juice. Blend everything together and freeze it, as simple as that.  This delicious frozen dessert goes to the 3rd day of BM under the theme "Fruits in different form". Ingredients: Blueberries fresh / frozen 2 cups Buttermilk low-fat / non-fat 1 cup Sugar 1/2 cup Lime / Lemon juice 1 spoon Vanilla extract 1/2 spoon Honey 2 to 3 spoons ( optional  for extra sweetness) Preparation: If using frozen blueberries, thaw them before using. If using fresh blueberries wash thoroughly and add them to blender. Also add buttermilk, sugar, lime juice, vanilla extract and honey. Papaya & Banana Smoothie

Papaya is native to central and northern South America. Additional crops are grown in India, Australia, Philippines and Hawaii. Papaya is eaten raw and ripe. They can be used as a food, a cooking aid and in traditional medicines. The stem and bark may be used in rope production. Papaya fruit is a significant source of Vitamin C, but otherwise generally has low content of nutrients. The ripe papaya is usually eaten raw without skin or seeds. The unripe papaya is eaten cooked in salads, curries and stews. In Thai cuisine unripe papaya is used in salads and Thai curries. In some parts of the world papaya leaves are made into tea as a treatment for Malaria. It is also said that papaya leaves can raise the platelet levels in blood, it may be used as a medicine for Dengue fever. For week 4, day 2, under the theme Fruits in different form, am here with another papaya recipe. I have taken ripe papaya and ripe banana to make a wonderful smoothie. Perfect cool smoothie for the summers. Here goes

Strawberry and Chocolate chip Cupcakes

A cupcake is a small cake designed to serve one person, which may be baked in small thin paper or aluminium cup. As in large cakes icing and other decoration may be applied. The standard cupcakes uses the basic ingredients such as butter, sugar, eggs and flour. The cake batter may be flavored with raisins, nuts, berries or chocolate chips or coco powder. These days we can find number of flavors and varieties of cupcakes. Kids love cupcakes, whether it is a birthday party or wedding or any other gathering. My kids love cakes and pastries. The cupcakes which I made today are made my my kids and myself. They helped me in beating eggs, mixing the fruit flavor, flour and the biggest thing was waiting for the cupcakes to cool down, hahahaha... Today we are starting with 4th and final week of BM 53. Vegetable and Quinoa Burrito / Wrap

Burrito is a type of Mexican food consisting of wheat flour or  corn flour tortilla wrapped or folded completely on all the sides with filling of veggies, meat, beans and rice inside it. Burritos are commonly called as tacos de harina which means wheat flour tacos. For day 3, under tortilla based dishes am here with a healthy and delicious Burrito / Wrap filled with veggies, quinoa and cheese. Usually burrito calls for rice for the filling, to make it little healthier I have replaced rice with quinoa. Easy to make and crunchy and delicious dish for a healthy life. Here goes the recipe... Ingredients: Tortilla 3 Quinoa 1/2 cup Bell pepper chopped  1/2 cup Onion chopped 1/2 cup Broccoli chopped 1/2 cup Tomato chopped 1/2 cup Chili flakes or chili powder 1 spoon Salt to taste Grated cheese 1 cup Ranch 1/2 cup Butter Lettuce 6 Preparation: Wash and cook quinoa in 1 cup water. Mexican is one of my family favorite cuisine. The basic native foods are beans, corn and chili peppers. Other than these Avocado's, squashes  and tomatoes are also the native ingredients. Breakfast is generally heartier than in other countries and can consist of leftover meat in broth, tacos, enchiladas or meat with eggs. This is usually served with beans, white bread or tortillas and coffee or juice.  One of the best known street foods of Mexico is the taco, whose origin is based on the Pre-Hispanic custom of picking up other foods with tortillas as utensils were not used. Tacos are not eaten as the main meal, they are generally eaten before midday or late in the evening.  Just as any other food stuff can be wrapped in a tortilla, in mexico it varies from rice to meat, vegetable, cheese or with plain chile peppers or fresh salsa.  You might have understood by now that today's post is about the Mexican food. Veg and Bean Quesadilla

Quesadilla is a wheat or corn tortilla filled with a savory mixture containing cheese, vegetables or meat and then cooked on a griddle then folded in half to serve. In  central and southern region of Mexico, quesadilla is a flat circle called tortilla, warmed to soften and filled with cheese and cooked until  cheese is completely melted. They are often served with salsa and Guacamole.  Quesadillas have been adapted to many different countries, they are served as appetizers or as a snack. This delicious bean and veg quesadilla goes for the 2nd day of BM 53, under the theme Tortilla based dishes.  Ingredients: Tortilla  2 Black beans 1 can Tomato 1 cup chopped Onion 1 cup chopped Cilantro chopped 1/2 cup Sweet corn 1 cup Bell pepper 1 cup ( any color) Mexican blend cheese 1 cup Mozzarella cheese 1 cup Salt to taste Black pepper powder 1 spoon Preparation: I used canned black beans here, so remove and wash the beans thoroughly under running water. Bakwan Jagung~ Indonesian Corn Fritters ~ Corn Cakes

Today we are going to the land of  Indonesia. In this country assorted fritters are called Gorengan. Many kinds of fritters are made with various kinds of ingredients which are battered and deep fried. Bakwan usually refers to vegetable fritter commonly sold by street vendors in Indonesia. Because of its similarity Bakwan is often interchangeable with " perkedel" . For example Indonesian corn fritters are often called either 'perkedel jagung' or ' Bakwan jagung' . Today for day 2 under the theme " bring on fritters" I have made a yummy fritter/ cake from Indonesia. These corn cakes are sweet and savory.  My son specially loved these corn cakes. Baya Kyaw ~ Burmese Yellow Split Pea Fritters

Today's fritters are from Burmese Cuisine. Burmese includes dishes from various regions of the Southeast Asian country Burma which is now known as Myanmar. Burmese Cuisine is influenced by Indian, Chinese and Thai Cuisine. Baya kyaw is a popular snack found in Burma. These are  simple to make and  very tasty.  These crispy fritters are made with  Yellow Split Peas paste with some simple spices.  These look and taste some what similar to Indian Masala Vada which are also made of lentils. Baya Kyaw are served with red chili  sauce or Tamarind sauce. Baya Kyaw can be served as an appetizers  or snack in parties. Had  these crispy fritters on a rainy day which a cup of hot Tea. Believe me they taste soo good.  This recipe goes to the 3rd day of BM 53, under "Bring on Fritters". Found this interesting   recipe on you tube. African Banana Fritters

Fritter is a name applied to a wide variety of fried food. These fritters consist of a portion of batter made of flour or bread which is filled with bits and pieces of meat or vegetables or fruits. Some  are crispy and some are soft, they can be sweet or savory, depending on what kind of fritter you are preparing. Fritters are made all over the world with different names like Bhajji, cakes, pakoda etc.         Today I am here with African Banana Fritter. This is famous in West Africa where bananas are mashed and mixed with flour, egg and spice powder. These delicious fritters are served as a breakfast and as a dessert too. Simple and easy recipe which can be made in no time. This dish goes to the 1st day of BM # 53, week 1, under the theme " Bring on Fritters".
