Gobhi Paratha

Gobhi paratha is another popular dish from punjab, others being aloo paratha, paneer paratha etc...This dish is usually made for breakfast and served with pickle and curds on the side. Grate the cauliflower and add some spices according to your taste, cook and cool it before stuffing into paratha. Simple yet delicious paratha's are ready in just few minutes. This recipes goes to the final day of 4th week of Blogging Marathon 86 under the theme " Stuffed flatbread from different countries". Ingredients: Grated cauliflower / gobhi 1 cup Crushed red pepper 1/2 spoon Garlic powder 3/4 spoon Chopped coriander 3 spoons Cumin seeds 1/2 spoon Salt to taste Oil  Wheat flour 2 cups Preparation: Add salt and 2 spoons oil to wheat flour, mix. Add water to the flour to make a nice and semi soft dough. In a pan heat 2 spoons oil and add cumin seeds. Saute for few seconds and add grated cauliflower. Carrot Broccoli Paratha

Today am here with yet another yummy and delicious Indian stuffed flatbread, Carrot broccoli Paratha. Colorful and healthy parathas can be served for breakfast, lunch box or for dinner. Add spices and other seasoning according to your taste.  This recipes goes to the 2nd day of BM 86 for week 4 under the theme " Stuffed flat bread from different countries". Here goes the recipe.... Ingredients: Grated carrot 1 cup Grated broccoli 1 cup Grated garlic 2 spoons Slat to taste Red chili flakes  1/2 spoon Oil  Wheat flour 2 cups Preparation: In a cooking pan heat oil and add grated garlic. Saute for few seconds and add grated carrots and broccoli. Add salt and chili flakes. Mix and cook till nice and dry. Cook till there is no moisture left in the pan. Set aside. Add salt and 1 spoon oil to the wheat flour, make it a nice semi soft dough. Rest aside for 15 minutes. Now make 4 or 5 medium size balls with dough. Roll it a bit using dry flour. Green Peas Paratha / Matar Ka Paratha

Green peas paratha is whole wheat flat bread stuffed with mashed and seasoned green peas. Delicious, healthy and filling  peas paratha is perfect to having for breakfast, lunch box or lunch along with some raita or any pickle.  Today we are starting with another week of Blogging Marathon 86. My theme for the week is " Stuffed flat bread from different countries". For day 1, am here with a delicious and healthy flat break from India. Great way to feed kids who do not like green peas, like mine. Add some spices or seasoning according to your taste. Here goes the recipe....... Ingredients: Frozen Green peas 1 cup Ginger  1 inch root Green chili 2 Fresh coriander 1/4 cup Salt to taste Wheat flour 2 cups Oil Preparation: Add little salt and 2 spoons  oil to wheat flour. Add water to make a nice chapati dough. Set aside. Presser cook green peas for 1- 2 whistles. Drain water and grind it to course paste along with ginger, green chili and coriander. Quinoa is one of the worlds popular health foods. Quinoa is Gluten free, high in protein and contains all 9 essential amino fluids. High in fiber, iron and  calcium. As it is high in protein, it can both increase metabolism and reduce appetite. Today I am here to show you how to prepare ladoo with this healthy seeds. This recipe is adapted from here,  only change I made was, I replaced sugar with jaggery to make it more healthier. Here goes the simple and delicious Quinoa ladoo......... Ingredients: Quinoa 1 cup Jaggery 1/2 cup Butter / ghee 2 spoons Milk 1/4 cup Water 1 spoon Preparation: Wash quinoa thoroughly, drain water. Spread the quinoa on a dry kitchen cloth and let dry for a day. Now grind the quinoa, just like sooji / semolina. Heat butter in a non stick pan and add grounded  quinoa and roast on low flame. Keep stirring to roast evenly. In a separate sauce pan add jaggery and water. Let the jaggery melt completely , filer out all the impurities and add to the roasting quinoa

Carrot Ladoo

Have you ever tried Carrot ladoo? If not, you have to try this delicious carrot ladoo made with grated carrots and condensed milk. Add lot of nuts of your choice, yummy. Have tried this ladoo for the first time and believe me they are so good, taste wise and look wise too.  This recipes goes tot he 2nd day of Blogging Marathon 86, under the theme " All that comes round are Ladoo's ? Here goes the recipe........ Ingredients: Grated carrots 2 cups Condensed milk 3/4 of  cup Cardamom powder 1/2 spoon Cashew nuts chopped 4 spoons Desiccated coconut 4 spoons Preparation: In a non stick pan add grated carrots and condensed milk. Mix nicely and cook on medium heat. Keep stirring in between so that the bottom doesn't stick. Add chopped cashew and cardamom powder. Mix and let cook till the mixture is thick enough to make ladoo. Remove from heat and set aside to cool down. Now make ladoo's and roll them in desiccated coconut. These ladoo's can be stored in airtight container

Today's recipes is yet another favorite of mine which my mom used to make often. She used to make Coconut ladoo after every festival. You might be thing why after festivals, not for or during festivals. The reason is simple, breaking coconut in front of God and Goddesses is a common practice in India. It is an essential offering in almost all rituals in Hindu religion. So we used to have lot of coconuts after each festival, mom made sure she makes ladoo with some of those. Others were used to add in curries or make chutneys. Coconut ladoo's can be made with just 3 ingredients, fresh or frozen grated coconut, sugar and milk. For extra flavor and crunch you can add cardamom powder, cashew nuts, almonds and raisins. This recipes goes to the 1st day of Week 2 for 86th Edition of Blogging Marathon under the theme "All that come round are Ladoos ? " Here goes the recipe...... Ingredients: Freshly grated coconut / frozen 2 cups Sugar 3/4 cup Milk 1 1/2 cup Cardamom powder 1/
