Peanut Rice

Quick,  easy and healthy peanut rice can be a great dish to pack in your kids lunch box or hubby's lunch box. Can be made with left over rice or freshly cooked rice. Flavorful rice made with freshly ground spice powder. This recipe goes to the 3rd and final day of BM 78 for week 4, under the theme Kids Delight- Lunch Box recipes. This recipe is adapted from Home Cooking video from Facebook.Here goes the recipe........ Ingredients: Peanuts 3/4  cup Sesame seeds 2 spoons Dry coconut 2 spoons Udad dal 2 spoons Red chilies 4 Cocount oil 5 spoons Cooked rice 2 cups Curry leaves 20 Preparation: In a pan heat  2 spoons oil, and add  1/2 cup peanuts and saute for a minute. Now add sesame seeds, udad dal and dry red chilies. Saute till they turn light golden brown. Now add dry coconut and mix well. Switch of flame and let the mixture cool down. Blend the mixture to course or smooth powder. Now heat rest of the oil in the same pan, add some more peanuts and curry leaves. Saute till peanuts

Masala Idly

Masala Idly is a simple and quick snack or breakfast dish. Apart from idly upma, fried idly, masala idly is a a great way to use fresh or leftover idlies. Add any masala you wish to, like sambar masala, maggi masala or a simple home made masala which I made with black pepper, garlic and curry leaves.  Fried crispy idly tastes yummy with this masala. A great way to feed your fussy kids.  This recipes goes to the week 4, day 2 of Blogging Marathon 78 under the theme " Kids Delight- Kids Lunch box recipes". Here goes the recipe..... Ingredients: Idly 4 Black pepper corns 5 Curry leaves 15 Fresh Garlic cloves 2 Cumin seeds 1/2 spoon Salt to taste Onion chopped 2 spoons Tomato chopped 1/4 cup Chopped cilantro 2 spoons Asafoetida 1/2 spoon Oil to deep fry Preparation: Cut idly into bite size pieces. Heat oil and deep fry the cut idly's to golden brown or till they turn crisp. In a blender  add peeled garlic cloves, 1/2 of the curry leaves, cumin seeds and pepper corns and blend

Mini Uttapam

Packing Kids Lunch Box is a big task for me, I hope its the same with all the parents. Its been a big challenge for me, specially with my son. You wont believe I packed just peanut butter & jelly Sandwich the whole school year for his kindergarten. Every year it has been a big challenge for me. But as he grew up, he started eating all types of food and life is easy for an extent for me now. As my little one started school this year, no wonder if she also starts giving me hard time like my son.  I make sure I pack a fruit, juice and a filling snack or lunch for kids. Most of the time I pack, plain idly with chutney, masala idly, veggi sandwich, cheese quesadilla, veggi or egg chapati rolls etc....... For today I have packed mini uttapam, blueberries, sliced carrots and fruit juice. I recently got a mini pancake pan, thinking it will be useful for pancakes as well as mini dosa or uttapam. And the mini pancake pan makes perfect pancakes, dosas and uttapams.  Today we are starting with

Independence day in India is celebrated  as a national holiday. India's Independence from the  British Empire on August 15, 1947. On this day, the President of India delivers the "Address to the Nation" and the Prime Minister hoists the Indian Flag on the ramparts of  Red Fort in Delhi, the Capital city of India. The Indian national anthem " Jana Gana Mana " is sung. Parades and pageants showcase scenes from the Independence struggle and India's diverse cultural traditions. Similar  events take place in state capitals where the Chief Minister of the each state hoist the flag. The whole India celebrates the day with great joy. People wish each other and distribute sweets and snacks. Today I have made tri color milk peda to celebrate India's Independence Day. Of course we still have some time for August 15. Bellam Kudumulu / Undrallu

Ganesh Chaturthi or Vinayaka Chaturthi is a Hindu festival that reverses God Ganesha. This 10 day festival is marked with Installation of Ganesha clay idols at home or at a public place in a neighborhood. This festival remembers of Ganesha birthday and celebrates him as god of good beginnings, prosperity and  obstacle remover. This festival is celebrated through out India specially as a public event organized by local youth group or associations. The primary sweet dish during this festival is Modak / Modakam or Kudumu /  Modaka / Kozhakatta /  modakam.  It is a dumpling made with rice flour stuffed with grated coconut and jaggery and dry fruits, later steamed or fried.  For day 2 under the theme " Pick a festival / special occasion " post for the day is about Kudumulu / Undrallu.   Ingredients: Rice flour 1 cup Bellam / Jaggery 1 cup Chana dal 1 tablespoon Cardamom / Elaichi powder 1/4 spoon Grated fresh coconut 1/4 cup Water 3/4 cup Ghee / Butter 1 tablespoon Preparation: Wa

Dal Vada

Janmashtami or Krishna Ashtami is a annual Hindu festival that celebrates the birth of Lord Krishna. It is a very important festival specially to the Vaishnavism tradition of Hinduism. Devotional singing through the midnight,when krishna is believed to have been born , fasting, a night vigil and a festival on the following day are a part of the celebration. It is celebrated particularly in Mathura and Vrindavan, along with other states of India. On this auspicious day the devotees of Lord Krishna observe fast and offer prayers in their own unique ways. 2 types of fast are observed on this day, Nirjal fast and Phalahar fast. Nirjal fast is who observe fast even without taking single drop of water. Phalahar fast is allowing devotees to consume water and fruits. During fast only certain kind of grains and flours are used. Sabudana kheer, dal  vada, ladoo, vrat ka halwa, are few dishes prepared on this day. Today we are starting with 2nd week of Blogging Marathon 78. My theme for the week
