Coconut Persimmon Smoothie

The Persimmon is a edible fruit which is yellow-orange color when ripe or dark red- orange depending on the species and variety. The ripe fruit has a high glucose content and has balanced protein profile. Like tomatoes, persimmons are not popularly considered as berries, but in terms of botanical morphology the fruit is in fact a berry. For day 3 under the theme Fruit based recipes, am here with a refreshing smoothie" Coconut and Persimmon Smoothie". Here goes the recipe... Ingredients: Ripe Persimmons 2 Milk 1 cup Shredded coconut 1/4 cup Honey 1/4 cup / Sugar 4 -5 spoons Ground Cinnamon 1/4 spoon Ground Nutmeg just a pinch or 2 Ice 1/2 cup Preparation: Peel the skin of Persimmons and cut into chunks. Add these chunks, honey, milk, shredded coconut ground nutmeg and cinnamon and ice into blender. Blend until smooth. Serve chilled. Check to see what my fellow bloggers are cooking for BM 69. Frozen Strawberry Yogurt

We have been to Strawberry pick last summer  where we got lots of fresh strawberries. I have freezed  a bag full of them  as I was leaving to India the very next week and couldn't finish them before we leave.Though the chilled weather started here in New Jersey, I don't mind preparing this delicious frozen yogurt for my family. It is a  healthy dessert  as we are adding honey  here instead of sugar. Can be served  after dinner or as a mid day snack for your kids and grownups.  This recipe goes to 4th week and  2nd day of Blogging Marathon  under the theme Kids Delight- Fruit based recipes.  Ingredients: Frozen  Strawberries 15 Honey 3 spoons / Sugar 2 spoons Greek yogurt / Regular yogurt 1 cup Lime juice 1  1/2 spoon Fresh strawberries for garnishing Preparation: Add frozen strawberries, honey, yogurt and lime juice in blender or food  processor. Blend everything  together till smooth. You can serve immediately with some fresh strawberries on top. Or transfer to a bowl and free

Banana & Chocolate Milkshake

Banana and chocolate together is a great combination to create many flavorful shakes and desserts. Adding banana to a regular chocolate milkshake gives it a very rich, creamy and fruitier flavor drink. This has become my son's favorite drink recently. K, my son who did not like ripe banana's at all, suddenly started liking them in a form of milkshake.  Today we are starting with final week of BM 69. My theme for this week is "Kids Delight- Fruit Based Recipes".  This is a great drink for breakfast, mid day  or after school snack. Here goes the recipe.. Ingredients: Ripe Banana 1 Hershey's chocolate spread 1 tbs Milk 1 cup Bournvita  1/2 spoon Preparation: Peel the ripe banana and add it to a blender Also add chocolate spread and chilled milk. Blend everything till its nice and creamy. Transfer in serving glass and sprinkle some borunvita powder on top. Serve immediately . Check to see what my fellow bloggers are cooking for BM 69. Stuffed Sweet Peppers / Chilies

Bought these colorful sweet chilies from a store and didn't know how to use them. Used half of the chilies in Hyderabad Special dish Mirchi Ka Salan  and  it tasted delicious. As the gravy was spicy didn't feel like the chilies were sweeter.   I had guests in the weekend and wanted to make some simple appetizer which doesn't take much time. Also didn't want something which is deep fried. So made a simple mashed potato curry which we usually make for masala dosa. And stuffed this curry in the chilies and baked them. They turned  out super tasty and my guests loved them.  If you want to serve to kids you can add some grated cheese in the curry before stuffing or you can even dip these stuffed chilies in cheese instead of bread crumbs. But  remember to serve these stuffed chilies hot  as they  taste best when they are hot. This recipe goes to Week 1, Day 3  of BM 69 under the theme " Small Bites".   Here goes the recipe.......                                    

Potato Smiley's

This is one of the recipe which I was planning to make since very long time. Had  these cute little smileys made by my sister in my last India trip. Kids loved them so much that I had to try them at home. These simple, crisp and yummy smiles goes to the 2nd day of BM 69 under the theme " Small Bites". Ingredients: Boiled potatoes 4 Grated Parmesan cheese 2 spoons Italian Seasoning 1 spoon Salt to taste Corn flour 3 spoons Oil for deep frying Ketchup to serve Preparation: Remove the skin of boiled potatoes and mash it thoroughly. Add grated cheese, Italian seasoning, chili powder and salt to taste. Also add 3 spoons corn flour and make it into a nice dough. Cover and refrigerate for 30 to 45 minutes. Remove and knead the dough once again. Roll the dough using rolling pin, cut it into cute and small rounds. Remove the circles aside and give them eyes shape with straw and smiley mouth shape  using a spoon. Heat oil for deep frying. Drop few smileys at a time to fry. Fry till nic

Bread Vada ( Mini version)

Hello friends ! Feels so good to be back, blogging after almost 2 months break. Was in India ( Hyderabad) to attend my sister's wedding, met all my relatives and friends. Feels so good to see all of them at one place  after so many years. Unfortunately couldn't meet any of the food bloggers :( Will plan to meet in the next visit for sure. Coming to blogging, today we are starting with 69th Edition of BM. My theme for this week is " Small Bites". Serving anything in a mini version / bite size. For day 1, am here with nice and crunchy Bread Vada. I must say this is healthy too as am adding lot of greens and carrots to this, specially cilantro, mint and spinach. Great snack for any party, or as a snack for lunch boxes. Here goes the recipe.....
