Potato Stuffed Bread Rolls

Breakfast is the first and most important meal of the day. It is said that we have to eat breakfast like a king, lunch like a prince and dinner like a beggar. The menu varies from place to place. Globally there are very wide range of preparations and ingredients that are associated with breakfast. Me being south Indian, out typical breakfast consists of idly, dosa, upma, poori etc.... Now that I am living in USA for quite sometime now, we have changed our menu to cereal, toasted bread, oatmeal, scrambled eggs etc.... I sometimes mix and match the menu and ingredients involved in it.  Today's recipe is one such mix and match dish of french toast and bread roll. I had some left over  potato which I used for making parathas. Here I will cutting the edges of bread then roll it to make it thin. Fill it with potato and fold it to dip in  beaten eggs. Croissant

Croissants are one of my favorite breads. Croissants are buttery, flaky and French Origin bread. The dough is made with yeast, sugar, salt and lots of butter. The dough is layered with butter and folded couple of times and rolled into sheets. These simple, light and delicious croissants are great to have for breakfast along with a cup of coffee or milk. They can be stores in air tight container for up to 10 days. This recipe is adapted from here . Bedmi Puri

Puri is a popular breakfast dish made with wheat flour. The flour is made into semi smooth dough then rolled out into small circles and then deep fried. It is usaully served with potato curry, kurma or chana masala. This is the traditional puri which is made all over Indian Sub continent.  Bedmi Puri is another popular breakfast dish made in Delhi and some parts of Uttar Pradesh. Udad dal is the key ingredient for this dish. Udad dal is an energy booster as it is rich in protein and iron, and most importantly it improves digestion. Udad dal is added by soaking in water and grinding into smooth paste. There puri's is slightly thicker than the regular puri. Bedmi puri is usually served with spicy potato curry. Egg Muffins

Egg Muffins are low carb and easy to make ahead of time snack. Healthy and perfect breakfast dish or for evening snack / after school snack. Just crack the eggs and add lots of  your favorite sauteed   veggies along with some  cheese if you and your kids  like it. Add the mixture to muffins trays and bake, delicious and healthy dish is ready in just few minutes. These muffins can be made and refrigerated or freeze it  for later you. Hello friends, first of all a very Happy New Year 2019  to all of you from me and my Kitchen. I Hope you all had a very good time spent with your family and friends and of course  with lots of  food.  My first post for 2019 is a very interesting and spicy dish made with Appe. Click  appe or gunta ponganalu recipe.  I would say left over appe because I made this yummy dish with lots of left over appe  from today's breakfast.  We  usually have very lite and simple menu for dinner like roti - sabzi or pasta or some times just  bread and omelette. What a good way to start your day with a healthy and delicious breakfast. This is one such dish where you need only 3 ingredients to make a perfect, easy and quick dish. My kids love pancakes. I usually get a store bought pancake mix, add eggs  and milk along with some fruits or chocolate chips according to kids choice. But today's pancake dish is made without any flour. Pesarattu Upma ( Andhra Special )

Pesarattu Upma is a traditional breakfast dish of Andhra Pradesh. ( Pesara -attu) Pesara means whole green gram, attu means dosa. This dosa is healthier than the regular dosa as whole green grams has more nutrients than the other dosa. This dosa is typically served with upma which will be stuffed inside dosa, alongside ginger chutney. Nutella Crepes with Mixed Berries

A Crepe is a type of thin pastry usually made of wheat flour. Crepes are popular through out France. Crepes are served with variety of fillings sugary or savory.  Sweet Crepes are made with wheat flour where as savory crepes are made of non wheat flours like buckwheat flour.  Savory crepes fillings could be cheese, ham, eggs, or any kind of meat.  Where as sweet crepes are filled and topped with nutella spread, whipped cream, custard, sliced or chopped fruits.  Today we are starting with 2nd week of Blogging Marathon 82. Colored Vermicelli Upma

Upma is one of the popular  and regular breakfast made all over India specially in South India. Upma is made with Semolina, Cracked wheat, cracked rice , Vermicelli, Pressed rice or puffed rice.  Its up to you if you want to add any vegetable of your choice or skip them totally. I like to add some veggies as my kids are very fussy in eating veggies.  I picked this  colored Vermicelli in the Indian store thinking of making Payasam. My kids do not like payasam too which I make with regular vermicelli. Seeing this colorful vermicelli they at least tried to have few spoons. Today I have tried making Upma with it, adding cabbage which my kids do not like at all. Pudina / Mint Thepla

Thepla is a Indian flat bread and most popular in Gujarat, India.  Thepla tastes great if the dough is made perfect. We add little milk and yogurt to make the dough which makes the thepla soft. You can add any vegetable of your choice to the flour along with spices. I have tried Methi / Fenugreek leaves and cabbage earlier. Masala Idly is a simple and quick snack or breakfast dish. Apart from idly upma, fried idly, masala idly is a a great way to use fresh or leftover idlies. Add any masala you wish to, like sambar masala, maggi masala or a simple home made masala which I made with black pepper, garlic and curry leaves.  Fried crispy idly tastes yummy with this masala. Blueberry Chia Pudding

Chia seeds have become one of my favorite ingredients, I add them in smoothies, puddings, oatmeal, cookies and fruit Popsicles too. Chia seeds are full of fiber, Omega-3 fatty acids, protein, carbohydrates and calcium. On the other hand Blueberries are the most nutrient dense berries which contains Fiber, Vitamin C and K.  Blueberries and Chia seeds make a great combination to make smoothies or puddings. Today I am here with a great pudding recipe with these 2 Ingredients, which is perfect as  a breakfast, dessert or snack. I have used fresh banana and blueberries for the recipe but, it would taste best if you use frozen berries and banana for the recipe.
