Spicy Onion Rice

Spicy onion rice is a simple and easy dish made in just few minutes if you have the rice ready. I had some rice left over from my dinner last night. I didn't have much time to cook any curry for myself with the busy schedule I had today. Then I remembered my maid in India telling me about this simple and tasty dish which she makes very often. I loved this spicy onion rice she made for me 1 day. This dish is such a time saver and also a great dish to make when you have lot of left over white rice.  This recipe goes to week 4 day 3 of Blogging Marathon 109 under the theme " Rice Dishes ". Spanakorizo ~~ Greek Spinach & Rice

Greek cuisine is a Mediterranean Cuisine  makes  wide  use of  Vegetables, olive oil, fish and meat.  Spanakorizo or Greek Spinach rice is one of the traditional  Greek vegetarian  recipe. Squeeze some lemon juice on the rice and serve as it is or with feta cheese or Greek yogurt. This is one of the nutritious and delicious recipe as the dish is filled with lot of fresh dill, spinach and lemon juice. Today we are starting  with 3rd week of BM 76. My theme for the week is " Flavours of Greece". For next 3 days I will be posting 3 delicious dishes of Greece. For day 1, am here with delicious and simple one pot dish Spanakorizo. Coconut Cilantro Rice

The coconut is known for its great versatility as seen in many uses of its different parts.Coconuts are part of daily diets of many people.They are different form any other fruit because they contain large quantity of water. When dried , coconut flesh is called Copra. The oil and milk derived from it are commonly used in cooking and frying. Today I am here with a simple rice dish with freshly grated coconut and cilantro. Cilantro gives nice flavor and color to the rice.  This dish goes to the 3rd day of BM 62, week 2 under the theme "Cook with Coconut". Today's recipe is one of the simplest recipe which can be made in no time. Just roast the masala ingredients make a powder, combine with rice and cook. Schezwan Veg Fried Rice

I am a big fan of spicy food, specially when it comes to Chinese and South Indian food. Made this dish couple of month ago when my family was craving for Chinese food. Kids wanted noodles, so made hakka noodles for them and Spicy Schezwan Fried fried rice us me and hubby dear. As I had some Cauliflower in my fridge, made Gobi Manchuria along with  sweet corn soup to make it a complete Indo-Chinese meal. Schezwan Fried Rice is a Indo-Chinese dish, which I made with home made Schezwan Sauce. If this sauce is ready and handy to you in your refrigerator you can make this spicy and delicious fried rice with in few minutes.Very easy to make with very few ingredients.I have  made this a veg version, but you can also add cooked chicken, eggs, shrimp and any other meat too. Apart from Indian food, me and hubby dear love to eat from other cuisines, specially on weekends. We prefer  Chinese, Mexican and specially Thai. These Cuisines are not only tasty but also very simple to cook. One such dish which is very simple to prepare is Thai Chicken Fried Rice. Simple ingredients, simple preparation and awesome taste. This  is one of my favorite dish which is  made in the weekends, specially on the days where we go outing come home tired and not willing to cook any dish which has lengthy process. This is for those lazy weekends and for those who want to make some thing different from the regular menu. This will be my 3rd post for BM 52, week 1  under the theme " Weekend Dinner Menu".  Thai cuisine is the national cuisine  of Thailand . Blending elements of several Southeast Asian  traditions, Thai cooking places emphasis on lightly prepared dishes with strong aromatic  components. The spiciness  of Thai cuisine is well known. Thai food is known for its balance of three to four fundamental taste senses in each dish or the overall meal like sour, sweet, salty and bitter . Khao phat is one  of the most common rice dishes in Thailand. Usually made with  chicken,  shrimp,  coconut or pineapple, or vegetables.  For final day of week 1 of BM 38 under Gourmet Rice Dishes  am here with Thai Pineapple Fried Rice. Spicy Capsicum Rice

Today we are starting with 4th week of BM 34. My theme for this week is "Cooking  with Capsicum".  Capsicum or bell pepper is used in various Cuisines. These are of different color's, yellow, red and green. Yellow and red color bell peppers are bit sweeter than the green ones. Capsicum can be used in making rice, chutney, as a side dish, salad etc. For the day 1, I made Spicy Capsicum rice. I have used green and red capsicum here  with some spices and cooked rice. Mexican Rice / Spanish Rice

Spanish rice   or Mexican Rice is a side dish made from white Rice, tomatoes, garlic and onion, and other ingredients. It is traditionally made by sautening the rice in a skillet until it is golden brown. Water or chicken broth are then added along with chopped tomatoes or tomato sauce. Although called "Spanish rice", this dish is unknown in Spain . The term "Spanish rice" is not used by Mexicans or Mexican food enthusiasts, and its use probably stems from the fact that the Spanish language is spoken in Mexico . It is a popular dish in the American  Southwest, which refers to the dish as "Mexican rice". The version of the dish cooked throughout Northern Mexico tends to be a more homogeneous character, often with just enough tomato and Chili pepper to give the distinctive red-orange color and a smoky, garlic and onion-laden flavor. Hello Friends, Firstly Happy Chirstmas to all the bloggers and all my friends. This week's theme for the BM 23 is Special Theme - Revisiting the old with new picture. So for the 1st day its Tomato rice. Check for the original recipe here .    We need: Tomatoes 2 large Rice 2 cups Mustard seeds 1/2 sp Cumin seeds 1/2 sp Chana dal 1 sp Curry leaves 6 Red chillies 2 Green chillies 2 Chilli powder 1sp Haldi 1/4 sp Salt to taste Cilantro chopped 1/2 cup Ginger Garlic paste 1sp Oil 1/4 cup Method: Cook rice and keep aside. Heat large pan and add oil. Now add mustard, cumin,chana dal,curry leaves and red chillies. Saute and add green chillies and chopped tomatoes. Now add ginger garlic paste, haldi, salt and chilli powder. Cook till tomatoes are soften and are easily mashedup when you press them with spatula. Now add cooked rice and mix well.
