Palak Moong Dal fry

Spinach and Moong dal is a great combination. This quick and healthy dish goes well with roti or with plain rice too. Adding lot of garlic to this gives nice flavor and taste too. This recipes goes to the 3rd day of BM 74 for the 4th week, under the theme " Quick and Delicious Stir- fries". We need: Palak  Spinach chopped 6 cups Moong dal 1 cup Green chilies 6 Onion small 1 Garlic cloves 4 Salt to taste Haldi 1/2 sp Chili powder 1 spoon Oil 3spoons Method: Heat oil in pan and add chopped onions and slit green chillies. Saute and add crushed garlic and cook till raw smell dissappears and onions are slight brown in color. Now add moongdal and fry for few mits. Now add washed and chopped spinach/ palak. Saute for few mits and add slat, haldi and chilli powder. Do not add water. Cook on medium flame till water whcih comes from spinach disappears. Transfer to bowl and serve hot with rice or roti. Bhindi Stir Fry with Peanuts

Bhindi Stir fry is one of the easiest dish to prepare to go with chapati / roti. Perfect side dish to go with rice too.Adding peanuts gives a nice taste and crunchiness to the dish.  This recipe goes to the week 4, day 2  of BM 65 under the theme " One Vegetable different ways". Here goes the recipe..... Ingredients: Bhindi / Okra  1 lb   Peanuts 1/4 cup Mustard seeds 1/2 spoon Cumin seeds 1/2 spoon  Red chili 2 Crushed garlic 1 spoon Curry leaves 6 Chana dal 1 spoon Turmeric powder 1/2 spoon Chili powder 3/4 spoon Salt to taste Oil 4- 5 tbsp  Preparation: Dry roast peanuts, remove skin  and keep aside. Wash bhindi / okra and pat dry.  Cut them into small pieces. In a wok / pan heat oil and add mustard seeds. Once the mustard seeds crackle add cumin seeds, red chili, chana dal, curry leaves, crushed garlic. Saute for a minute, and add okra. Add turmeric powder and salt. Taro Root Fry / Arbi Fry / Chama dumpa Vepudu

Today's recipe is a simple one which my mom used to make it. Simple recipe with very  few ingredients but never got that taste which mom used to make. This yummy dry side dish is made with Taro root which is called as Chama dumpa / Chama gadda in Telugu and Arbi in Hindi.  This root vegetable can be cooked in several ways. Can boil the taro root and cut and just simply fry in oil or make a tangy  gravy curry with onions, tamarind pulp and jaggery. Some times I add boiled eggs too to this tangy curry. Today we are starting with 2nd week of BM 61, and my theme for this week is to cook with "Root Vegetables".  There are many root vegetable, some of them which commonly known are Carrots, Onions, Radish, Beet root, Potato , Taro root etc.... Sweet Potato Fries

For the final day of week 1, a here with yet another healthy and kids favorite Potato fries. My kids are a big fan of the fries, specially my daughter. This is the only thing she likes to eat when we got to Mc D.  To make these fries little healthier, I baked these fries instead of deep frying. Also used sweet potatoes instead of regular potatoes. These taste little sweeter  but have an amazing taste when seasoned and baked with pepper powder and salt. You can also add little onion and garlic powder to them before baking.  These are great with some evening tea or coffee, specially during rainy season. Goes well with burgers  and sandwiches as a side dish. Here goes the recipe...... We need: Sweet Potatoes 3 large Salt to taste Black pepper powder  1/2 spoon Oil 2 spoons Method: Peel the skin of sweet potatoes. Cut them into long strips around 1/4 inch thick. Chicken Fry

  We need: Whole Chicken 3 pounds Large onion 1 Green chilies 6 Curry leaves 6 Cinnamon  1 inch  stick Cradamom 3 Cloves 4 Ginger garlis paste 3sps Chili powder 1sp Garam masala 1sp Haldi 1/2 sp Salt to taste Oil 1/2 cup Chopped cilantro 1/2 cup Method: Cut chicken into medium or small pieces as you like and wash them. Add haldi, ginger garlic paste, chili powder and salt to chicken and marinate for 1 hour. In a pressure cooker add 2sps oil and add the marinated chicken. Saute for few minutes and add 1/4 cup water. Mix well and pressure cook till done. In another pan heat rest of the oil and add whole garam masala. Saute and add sliced onions, curryleaves and green chilies. Fry till golden brown. Now add cooked chicken with water if any and mix well. Add garam masala and cook further till the chicken turns to slight brown color. Please make sure this process is done on medium flame.
