Oats Pancake / Oats uttapam

For final day of week 2, BM 38, am here with some healthy and delicious Oats Pancake.  I have added some grated carrot, cilantro and spinach to make it more tasty and healthy. Can have it for breakfast, after school or  for  dinner too. But remember to serve hot as it tastes better while the pancakes are hot. We had it with some coconut chutney but kids loved to have with ketchup. Here goes the recipe......


We need:

Oats 1 cup
Rice flour 3 spoons
Jeera / cumin seeds 1/2 spoon
Yogurt / curds 3spoons
Grated carrot 2 spoons
Chopped onion 2 spoons
Chopped cilantro 1spoon
Chopped spinach 2spoons
Salt to taste
Green chili chopped 1/4 spoon( optional)
Chili powder 1/4 spoon
Oil 


Method:


Heat pan and dry roast the oats for 5 to 6 minutes.
Let it cool and make a powder out of it.
Add rice flour, carrot, onion,  green chili, cumin seeds, spinach,cilantro, salt and chili powder.
Add curds and mix well.

Now add enough  water and mix well to make a smooth batter like dosa or uttapam batter.
Let it rest for 10 to 15 minutes.
Heat a non stick skillet or dosa pan.
Take ladle full of batter and pour it in the centre of the pan.
Spread it around as you do for dosa.
Add some oil around pancake and cook for 2 to 3 minutes on medium flame.
Now flip the pancake and cook on other side for another 3 to 4 minutes or till nice and crisp.
Remove and serve hot with any chutney or ketchup.
