Plum Cake

Todays post my first attempt in baking Plum Cake. Got this recipe from one of my dear friend who is very good at baking cakes and cookies. Baked it today and came out perfect on this special occasion where the whole world is celebrating Christmas. Kids and dear hubby loved it and of course me too :)

                                             

Here goes the recipe.


We need:

All purpose flour 2 1/2 cups
Sugar  1 1/2 cup
Unsalted butter 1 cup
Cashew Nuts 1/2 cup
Black Raisins 1/4 cup
Golden Raisins 1/4 cup
Vanilla extract 1 spoon
Eggs 4
Boiling water 2 cups
Baling powder 1 spoon



Method:


Heat a small pan and add 3 spoons of sugar into it.
Turn the flame to  medium to low heat and let the sugar melt to.
Do not shake or move the pan once the sugar starts to melt completely.
Switch off flame and add 2 cups of boiling water to it.
Now switch on the flame again and boil the water  for another 5 minutes.
Switch off flame and remove the nuts and raisins to another bowl and save the water for further cake process.
This way the nuts and raisins become soft and left out water is used in  cake batter to give a nice brown color.
In a large mixing bowl add butter ( room temperature ) and sugar.
Mix well till sugar melts a bit and now ad vanilla extract and eggs.
Beat well till you see the creamy texture.
Now add baking powder and all purpose flour.
Fold the mixture carefully with a spatula.
You can use hand blender too if you have.
In the nuts and raisins add 2 spoons of  dry flour and mix well.
It helps them to stay in their place rather than going down to stick  to the pan.
Now add the sugar water which we saved after cooking the nuts and raisins.
Also add the nuts mixed in dry flour.
Fold  it real quick and add this mixture to greased baking tray or cake pan.
Bake in preheated oven for about 45 to 50 minutes on 350 degrees F.
Drop a tooth pick or a knife after 45 minutes to check if the baking process is done.
If the toothpick or the knife comes out clean that means the baking is done.
Remove form oven and let it cool down completely to cut and serve.
