Carrot Rice

If you are looking for any quick rice recipe for  busy days for lunch or dinner or for the lunch boxes this is one of them. Quick and easy recipe if you have  cooked rice handy. As the carrots are bit sweet I have added slit green chilies and Red chili masala powder to this dish. Red chili masala powder is commonly used by South Indian in any veg or non veg curry or stir fries. I have used the store bought Masala powder here but it is very simple to make  at home too.

This red chili masala powder gives  totally a different flavor to any dish. So for day 3, week 2 of BM 71, under  the theme "One Ingredient - Different courses", am here with another dish with Carrots- Carrot Rice. Here goes the recipe.......





Ingredients:

Grated carrots 1 cup
Cooked rice 2 cups
Cashew Nuts 6
Chopped Garlic 1 spoon
Curry leaves 4
Chopped / slit  green chili 2
Kura Karam / Masala Red chili powder 2 spoons
Chana dal 1 spoon
Cumin seeds 1/2 spoon
Salt to taste
Chopped cilantro 3 spoons
Oil 3 spoons


Preparation:


Heat oil in pan and add chana dal, mustard seeds and curry leaves.
Saute for few seconds and add cashew nuts, slit green chilies and chopped garlic.
Now add grated carrots and cook for 5 to 6 minutes.
Now add cooked rice, salt and masala red chili powder.Mix well and cook for another 5 minutes.
Finally add chopped cilantro.
Serve hot.

  3. Rice looks flavorful and kura karam sounds like a flavorful spice mix. I don't think we use this spice mix.
