Coconut Ladoo with Sugar

Today's recipes is yet another favorite of mine which my mom used to make often. She used to make Coconut ladoo after every festival. You might be thing why after festivals, not for or during festivals. The reason is simple, breaking coconut in front of God and Goddesses is a common practice in India. It is an essential offering in almost all rituals in Hindu religion. So we used to have lot of coconuts after each festival, mom made sure she makes ladoo with some of those. Others were used to add in curries or make chutneys.


Coconut ladoo's can be made with just 3 ingredients, fresh or frozen grated coconut, sugar and milk. For extra flavor and crunch you can add cardamom powder, cashew nuts, almonds and raisins. This recipes goes to the 1st day of Week 2 for 86th Edition of Blogging Marathon under the theme "All that come round are Ladoos ? " Here goes the recipe......


Ingredients:


Freshly grated coconut / frozen 2 cups
Sugar 3/4 cup
Milk 1 1/2 cup
Cardamom powder 1/2 spoon
Cashew nuts


Preparation:


In a large non stick pan add grated coconut and milk.
Let cook on medium heat for 10-15 minutes.
When you see that milk is almost evaporated add sugar and give it a nice stir.
As the sugar melts the mixture will become loose again.
Cook further on medium to low flame for about 20 minutes.
The mixture has to be thick enough to make ladoo.
All the liquid in the mixture has  to evaporate.
Add cashew nuts roasted in ghee.
You can go ahead and add chopped almonds or raisins too as per your taste.

  6. My mom also makes coconut laddoo. We have tow coconut trees in our house and coconut sweets were a regular fare. Your looks great too.

  7. Guess all of us do this with so many festivals happening and on top my mom used to offer 3 to 4 coconuts, imagine the overload of coconuts stocked!..I am for coconut ladoo anytime..very nice ones..

  9. Same story in all the households. Amma used to make lots of coconut chutney for rice and laddu. Also, she makes similar laddu with leftover pooranam.
