Banana stuffed crepes
Today's recipe is from Thai Cuisine. A dessert called stuffed banana crepes. Its very simple and tasty. Few simple ingredients which are always available at home. Thai cuisine has always been my favorite as the dishes are some what similer to indian dishes. Simple ingredients and lite food. I bought this Thai recipes book from a book shop which had lots of simple and delicious dishes. Here is the recipe for todays yummy dish....
We need:
Maida / All purpose flour 1 1/2 cup
Brown sugar / sugar 2tbsp
Eggs 2
Milk 1 3/4 cup
Lime juice 1
Butter 2oz
Banana's 3
Corn syrup / maple syrup 4 tbsp
Method:
Add sugar, eggs and half the milk to flour and mix well.
Beat until smooth.
Slowly add rest of the milk to make a smooth batter.
Also add lime juice.
Heat pan / skittet and melt little butter.
Now pour quarter of the batter and spread it all over to amke thin crepe.
Cook for 1 to 2 minutes on low flame and flip over to cook on other side.
Repeat the same with rest of the batter.
Slice bananas and toss in some lime juice.
Pour some syrup and toss together.
Fold each crepe into half and another half again like a cone.
Fill the center with banana mixture.
Serve warm.
Remember to make crepes just before serving and also cut the bananas just before serving.
